Some tips for the best results on your cookies (or pie, or pasta, etc.) Make sure the disks of dough are well-chilled so they're easy to roll out thin.If the dough is too soft and sticks to the hands, add more flour.No baking powder- better embossing result on the cookies.Add 1/4 starch (potato flour) instead of wheat flour.Be generous with the flour on your dough pads before embossing.Roll up approx. 0.2 inch (5 mm) thick pastry before rlling the patterm.Do not over-bake your cookies, the pattern will be less visible if you do so.Try out different recipes in small amounts so you can choose the one that works the best for you.If the dough stick, remove it with brush, do not allow the dough to harden.After use clean dry with a brush first, then if needed with water, soap and a brush. Dry well before using again.Do not wash in a dishwasher and try to avoid prolonged contact with water.
